Bigger isn’t always better

I covered my first school board meeting in 1986 while working for the Clemson Messenger, and there began my real education. Dr. Curtis Sidden was the superintendent of education.

There have been many changes since 1986. There have been many different school boards and administrators. Some are more olivia6-25 Page 4A.inddknowledgeable of the education system than others. But they are all made up of people who are willing to dedicate hundreds of hours each year to public service. Some have one goal to accomplish and are disinterested in anything that doesn’t help them reach that one goal.

Some who serve come in thinking they can change the system and make drastic reforms. Some can compromise, and some won’t consider compromise.

All want children to receive the best education that is available. The bone of contention is always how that can be accomplished.

I was very fortunate to go to a small school. There were 200 students in grades one through 12. My graduating class was the largest in history, with 21 students.

Every student was important.

Smaller class sizes allowed teachers to give individual students attention. Teachers knew when we got it and when we didn’t. We weren’t treated as numbers, but as people.

The school and churches were the center of the community and bound everyone together. It was an excellent way to get an education.

Not everything in education should be evaluated based on cost. Figures can be manipulated and sometimes are to support one position or another.

Can millions of dollars be saved by closing three small elementary schools? That’s debatable. And even if it turns out to be true, should that be the deciding factor?

In the past, we’ve all seen millions wasted and opportunities squandered. Sometimes various school boards have indeed “gagged at a gnat and swallowed a camel.”

Yes, children can be bused to larger schools, and it will cut the cost of heating and cooling buildings and it will cut the number of teachers needed when classrooms are consolidated and fewer teachers have more students.

How will that help these children learn? I don’t think it will. I’ve visited all three of these elementary schools facing the chopping block. They all enjoy community support and involvement. They all offer children a sense of security and emotional support so needed when dealing with the very young.

And the smaller number of students in these schools is a real advantage for the children attending Holly Springs, Ambler and A.R. Lewis.

It is to be hoped that the campaign to close these schools will fail. We all have a stake in the education of the children of Pickens County.

 

Letter to the Editor 2-10-16

What is Hope?

Dear Editor,

Everyone has hope. We hope for good health, a new car, a new house, a good wife, a good husband; all kinds of hope. Most of which are what we want out of this life.

Let us look at a different hope. The hope that is from God and that is eternal. We read in the Scriptures (the Bible) that our blessed and eternal is in Christ Jesus the Son of God. If you have received Jesus Christ as your Lord and Savior in your heart, you have this blessed hope.

In our day (today) there is a movement to take the God out of everything except curse words. We live in perilous times, but as a Christian we have this blessed hope of our eternity with Christ. Yes, we go through trials, and troubles, but this Earth is not our permanent home. Our eternal home is in and with Christ Jesus. To be absent from this body is to be present with the Lord. Praise God. I am looking forward to that day. We have no promise of tomorrow, therefore we need (must) know Jesus Christ to have that hope. This is not knowledge of Christ, but a personal relationship with him. I pray that you will come to Christ before it is too late.

We just need to look around and see what is happening in this world today. As I study the scriptures and prophecy, I have to believe we are living in the last days. In the 24th chapter of Matthew, we read of what will take place in the last days. Those things stated are taking place today.

As Christiansm we must stand for the things of God and not what is politically correct. Our politicians promise everything but this eternal hope. We pray for God to bless America, and He has. We need to pray that God will have mercy on America and that we will serve God rather than man. Be prepared for the days ahead. Accept Jesus Christ as your Savior and Lord. God Bless.

Erin Shepherd

EASLEY — Erin Shepherd, 35, of Easley, passed away Jan. 31, 2016.

She was the daughter of Jackie Foster and Barbara Gail Pace. Survivors include her children, Josh Johnson, Kameron Shepherd and Zane Shepherd; sisters, Monica Linderman and Angie Wham; and one brother, Jason Hathcox.

Services were held Feb. 4 in the chapel of Westville Funeral Home, Greenville. In lieu of flowers, donations for her family may be made to Suntrust in Easley.

Mildred S. Lewis

Easley — Mrs. Mildred Swinson Lewis, 95, wife of the late DeWitt G. Lewis Sr., passed away Tuesday, Feb. 2, 2016, at the Magnolias of Easley.

Born in Duplin County, N.C., a daughter of the late Ben Sutton and Minnie Lewis Swinson, Mrs. Lewis was a retired registered nurse, having worked with Samson Memorial Hospital, Duplin General Hospital and Cherry Hospital. She was a previous member of the N.C. Nurses Association and served as a delegate for the American Nurses Association. She was of the Methodist faith.

Surviving are two sons, DeWitt G. Lewis Jr. of Easley and Edwin Lee Lewis of Charlotte, N.C.; four grandchildren; five great-grandchildren; and one great-great-grandchild. In addition to her husband and parents, Mrs. Lewis was predeceased by two brothers and one sister.

Graveside services were held Feb. 5 at Hillcrest Memorial Park.

Rev. Willie Honea

Liberty — Reverend Willie Adolphus Honea, 86, of 100 Sunset Drive, a widely respected preacher, minister and pastor, passed away peacefully on Tuesday, Feb. 2, 2016, at the Hospice House in Anderson.

Born in Westminster, he was a son of the late Rev. Johnny Honea and Bessie Bell Lee Honea. He was a graduate of Anderson University and later attended Furman University and Erskine College. He served his country during the Korean War in the United States Army.

Rev. Honea was Pastor Emeritus of Calumet Baptist Church in Liberty, where he served for 25 years, and pastored for more than 55 years in the Upstate of South Carolina, serving at the following churches: Corinth Baptist Church (Westminster), New Hope Baptist Church (Seneca), and Six & Twenty Baptist Church (Pendleton). He was a member of Jones Avenue Baptist Church in Easley.

He was well known for his loving heart, his compassion for people and ministering to people in their time of need. He was a devoted servant of his Lord Jesus Christ and his church.

Surviving are his beloved wife of 65 years who stood by his side during his ministry, Betty S. Honea of the home; his loving daughter, Beverly Watson (Mike) of Liberty; three grandchildren, Heather W. Reeves (Dustin), Justin and Brandon Watson; a great-granddaughter, Emma Grace Reeves; and two sisters, Guynelle Holiday of Westminster and Rachel Tench of Seneca.

In addition to his parents, he was preceded in death by a son, Bradley Eugene Honea, two sisters, Cornice Williams and Juanita Spivey, and five brothers, Edward, Currell, Troy, Douglas and Johnny Honea.

Funeral services to honor the life of Rev. Willie Honea were held Feb. 6 at Calumet Baptist Church, officiated by Rev. Zack Shaw, Rev. Bobby Lindsey, Rev. Jeff Harris and Rev. John McKnight, with burial following at Oconee Memorial Park.

In lieu of flowers, memorials may be made to the church of one’s choice.

Fred Julian Dickard

Easley — Mr. Fred Julian Dickard, 71, of Easley, loving husband of Doan Dickard, passed away Tuesday, Feb. 2, 2016, at his residence.

Fred was born in Anderson County on Dec. 29, 1944, to the late Judson and Mary Leroy Dickard. He retired from J.P. Stevens Dunean plant and loved to fish, hunt and garden. He was a family man and was especially proud of his grandchildren and their accomplishments. Fred was a member of Pendleton Street Baptist Church in Easley.

In addition to his loving wife, Fred is survived by three children; Judy Moody (Tony) of Asheboro, N.C.; Vicki Davis (Roger) of Easley; and Jeffrey Dickard (Cindy) of Easley; his children’s mother; Loretta Dickard of Easley; five siblings; Inez Hendrix of Easley; Louise Gilstrap (John) of Easley; Randall Dickard (Dyanne) of Anderson; Rev. Dr. Robert Dickard (Faye) of Anderson; and Rev. Dr. Wayne Dickard (Anita) of Easley; and five grandchildren; Justin Moody, Amanda Davis, Lauren Moody, Matthew Owen and Mark Owen.

In addition to his parents, he was preceded in death by two brothers, Charles and Harold Dickard.

Funeral services were held Feb. 5 in the chapel of Robinson Funeral Home – Downtown. Interment followed at Greenlawn Memorial Park.

Frances Jennings

Easley — Mrs. Frances Rebecca Caldwell Jennings, 69, wife of the late Barney Keanum Sr. and the late Kenneth Van Jennings, passed away Thursday, Feb. 4, 2016, at Rainey Hospice House.

Born in Anderson County, a daughter of Elizabeth Holcombe Gibson and the late William Wesley Caldwell, Mrs. Jennings retired from Alice Manufacturing and was a member of Jones Avenue Baptist Church.

Surviving are two sons, Rodney Vinson of Pickens and Barney Keanum Jr. of Easley; a daughter, Margaret Dixon of Piedmont; two brothers, Billy Caldwell of Florida and Bobby Caldwell of Pickens; one sister, Hester Hendrix of Easley; five grandchildren and four great-grandchildren. In addition to her husband and father, Mrs. Jennings was predeceased by a daughter, Sarah Fessden.

Memorial services were held Feb. 8, in the chapel of Robinson Funeral Home-Downtown.

Kathleen Bowers

Greenville — Kathleen Lillian Jane McCall Bowers, 89, of Rolling Green Village in Greenville, died peacefully on Monday, Feb. 1, 2016.

In addition to her husband, E. Gordon Bowers Jr., she was also predeceased by her parents, George DeWitt and Alcovia Orr McCall of Brevard, N.C.; her brother and sister-in-law Charles DeWitt and Margaret Phillips McCall of Fletcher, N.C. and Lincoln City, Ore.; a son-in-law, E. Dean Mullinax of Simpsonville; and daughter-in-law, Lisa Miller Bowers Detrick of Idaho Falls, Idaho.

Given the nickname Kitty by her husband of 50-plus years, Mrs. Bowers was educated in Western North Carolina schools and Cecil’s Business College in Greenville. Although a stay-at-home mom for many years, her working career included jobs at Cannon Memorial Hospital, the S.C. State Highway Department, Veteran’s Affairs and Voter Registration offices in Pickens County. In 1970, she became employed by Beaverdam Baptist Association in Seneca, where she served as administrative assistant to directors of missions for 21 years.

Kitty was a woman of faith and a strong supporter of missionaries. She assisted in the development of a Women on Mission chapter at Rolling Green Village and actively communicated with missionaries by email to encourage them in their work. She always began her day by reading her Bible and praying for missionaries who had birthdays that day. She was known by her friends as a crafter who encouraged them to assist her in crocheting winter-weight caps for international Seafarers. She was a member First Baptist Church in Mauldin.

She is survived by three children, Betty Kathleen Bowers Mullinax (Dean) of Simpsonville, Elbert Gordon Bowers, III of Salem, and George Robert Bowers (Ramona) of Easley; a sister-in-law, Harriett Bryson; seven grandchildren and 10 great-grandchildren.

Services were held Feb. 5 at Dillard Funeral Home, with burial following at Hillcrest Memorial Park. A memorial service will be held at Rolling Green Village at a later date.

Memorials may be made to the Missions Endowment of First Baptist Church of Mauldin, 150 S. Main St., Mauldin, SC 29662.

The family would like to extend special thanks to the staff at Regency Hospice for the loving care given during Mom’s last days.

Daniel Earl “Danny” Epps

Pickens — Danny Epps, 56, was the loving husband of Tina Epps. They were married for 28 years.

Danny was the father of Jason (Kayla), Tyler (Dana), and Tessa (Ben). He was the proud grandfather of Caroline.

He is survived by his parents, Earl and Margaret Epps, a brother Barry (Jodi), two nephews, many loving cousins and his beloved dog Little Bit.

Danny worked for Furman Golf Course for eight years. He loved singing; he was a part of the group Ole #4 and the praise band at Porters Chapel United Methodist Church, where he was a member for 25 years.

Danny always had a big smile on his face and was always playing pranks.

He raised his children in a Christian environment, and his love for Jesus was obvious to everyone around him.

He was a big Clemson Tiger fan. All who knew him will miss Danny’s infectious laugh and smile.

We know he is now rejoicing in Heaven and wouldn’t come back even if he could. He was predeceased in death by his grandparents Earl and Willie Epps.

Services were held Feb. 4 in the Dillard Funeral Home chapel, with burial following at Porter’s Chapel United Methodist Church cemetery.

Contributions may be made to the family for a grave marker to celebrate Danny’s life. Dillard Funeral Home is assisting the Epps family.

Irene J. Hopkins

Central — Irene Johnston Hopkins, 98, formerly of Central, widow of Furman W. “Hop” Hopkins Sr., died Saturday, Feb. 6, 2016, at Hosanna Nursing and Rehab in Piedmont.

Born in Central, she was a daughter of the late Joseph Dixon and Brunettie Alexander Johnston. She was a graduate of Central High School and was a very active member of First Baptist Church, Central, having served as a Sunday school teacher, member and past president of the WMU, volunteered for many years with Vacation Bible School and for more than 50 years was in charge of the Bereavement Committee of the church. She was a cherished wife, mother, grandmother, great-grandmother and friend.

Surviving are sons, Furman W. (Nancy) Hopkins Jr. of Liberty, Bobby (Jane) Hopkins of Clemson and Ronnie (Cindy) Hopkins of Anderson; daughters, Gwen Gilstrap of Easley, Peggy Cover of Clemson and Linda (Doug) Patrick of Greenville; grandchildren, John W. Gilstrap, Sandra Cover, Kendra (Rigo Sanchez) Cover, Andrea Cover, Jeff W. Hopkins, Jennifer (Jason) Knight, Charles D. (Adrienne) Patrick, Joseph P. (Tia) Patrick, Russell Warren Patrick, Robby Hopkins, Chris (Casey) Hopkins and Ashley (Payton) Burdette; great-grandchildren, Conner Gilstrap, Jack Sanchez, Taylor and Stephen Hopkins, Jaylee Knight, Hudson, Bethany, Cale, J.P., Lydia and Lily Grace Patrick and Charleigh Hopkins; and seven step-grandchildren.

In addition to her husband and parents, she was predeceased by her brother, Garvin Johnston Sr.

Funeral services were held Feb. 9 at First Baptist Church, Central, with burial following in Memory Gardens.

Juanita J. Maness

Easley — On the afternoon of Friday, Feb. 5, 2016, Juanita Laura Johnson Maness passed away peacefully of natural causes, two days before her 82nd birthday.

Juanita was born in Whitmire to the late Curtis and Pearl Collingsworth Johnson. She attended Dobbins-Bennett High School in Kingsport, Tenn., where she met the love of her life, Hiram “Sonny” F. Maness Jr. In addition to being a devoted wife and mother of five children, Juanita also worked outside the home as a teaching assistant in the neonatal unit of a hospital, for G.E. Credit Corporation and for Westclox.

Juanita’s hobbies included making clothes for her children and grandchildren, designing and making quilts, and was even known by many as the “plant lady” for her love of the outdoors and flowers. She also loved to cook, and her signature biscuits and gravy earned her a fame that spans generations.

Juanita and Sonny remained married until his death in 2004. She was also preceded in death by two siblings, David Johnson and Wanda Goins.

Surviving are a son, Hiram “Butch” F. Maness III (Pam Schafer) of Myrtle Beach; four daughters, Cynthia Lynn Bollinger (Bruce) of Temple, Texas, Mary Ann Gaston (Grady) of Easley, Doris Kay McLeod (Bill) of Punta Gorda, Fla., and Laura J. Brown (Lankford) of Roanoke, Ala.; a brother, Curtis Johnson (Debbie) of Kingsport, Tenn.; a sister, Mary Ruth McFadden (Guy) of Asheville, N.C.; 12 grandchildren and four great-grandchildren.

Memorial services will be held at 2 p.m. Saturday, Feb. 13, in the chapel of Robinson Funeral Home-Downtown.

The family will receive friends from noon until 1:45 p.m. Saturday at the funeral home, prior to the service.

Hal Boyd Kelly

Central — Hal Boyd Kelly, 71, husband of Gennis Kelly, went to be with the Lord after a long illness Sunday Jan. 31, 2016.

Mr. Kelly was born in Pickens County and was the son of the late Ralph Leland Kelly and Eleanor Evatt Kelly.

Mr. Kelly was retired from Duke Power, loved gardening and being outdoors. He also was a member of Gap Hill Baptist Church.

Survivors include his wife Gennis Kelly of 17 years of the home, a stepson, Adam Gray (Pam) of Pickens; one sister, Nell Snipes of Six Mile; one brother, Roger Kelly (Brenda) of Six Mile; a sister-in-law, Mary Kelly of Six Mile; a mother-in-law, Lois Smith; and three grandchildren, Brandon Gray, Brianna Gray and Madison Gray. He is also survived by many nieces and nephews.

Mr. Kelly was predeceased by two brothers, Ralph Kelly Jr. and Leland Kelly, and his parents.

Services were held Feb. 3 in the Dillard Funeral Home chapel, with burial following at Hillcrest Memorial Park and Gardens.

Thelma Whitaker

Easley — Thelma Norton Whitaker, 78, of 200 Anne Drive, formerly of Liberty passed away on Sunday, Feb. 7, 2016 at Majesty Health & Rehab.

Born in Liberty she was a daughter of the late W.E. and Rilla Rich Norton. She retired from Brady’s Restaurant in Greenville and was a member of Flat Rock Baptist Church.

Surviving are a son, Ernie Swords of Liberty; two daughters, Jo Ann Kelley of Liberty, and Mary Barnes of Greenville, Tenn.; a step daughter, Becky Sargent of Liberty; two step sons, Mike and Marty Williams both of Easley; an aunt, Nannie Mae Pratt of Greenville; a daughter in law, Marie Swords of Liberty; nine grandchildren and 13 great-grandchildren.

In addition to her parents she was preceded in death by two sons, Bill and Richard Swords.

Betty F. Cox

Easley — Mrs. Betty Lou Fedney Cox, 67, wife of Douglas Henry Cox, passed away Saturday, Feb. 6, 2016 at her home.

Born in Vinton, Va., a daughter of the late Major Edward and Verna Mae Crowe Fedney, Mrs. Cox was a retired CNA and of the Baptist faith.

Surviving, in addition to her husband of 33 years, are two sons, Jackson Eugene Trammell and Jody Lee Trammell, both of Easley; two brothers, James Fedney of Greenville, and Jimmy Fedney of Va.; a sister, Billie Mae Scoonover of Va.; three grandchildren and one great-grandchild.

Private memorial services will be held at a later date.

Kenneth L. Adams

Central — Kenneth L. Adams, 79, of 118 Goodwin Drive, died Sunday, Feb. 7, 2016. Born in Pickens he was a son of the late John Talley, Sr. and Verba Adams.

He owned and operated Marietta Feed & Seed, and one of his favorite past times was racing.

Surviving are his wife, Barbara Davis Adams of the home; a son, Bobby Adams, Sr. (Rhonda) of Six Mile; a sister, Frances Aiken of Townville; two grandchildren, Bobby Adams, Jr. and Monica Adams; two great-grandchildren, Odin Ocampo and Mackenzie Adams.

In addition to his parents he was preceded in death by 10 brothers and sisters.

Funeral services to honor the life of Mr. Adams were held this morning in the Liberty Mortuary Chapel, followed by burial at Mountain View Memorial Park in Travelers Rest. Liberty Mortuary is handling arrangements

 

Courier Community Calendar 2-10-16

• Cannon to offer Wellness Wednesdays

Cannon Memorial Hospital will be offering a February Wednesday Wellness Special at the Cannon Annex each week in February from 7 a.m.-10 a.m. No appointment or doctor’s order needed. Participants can receive a discounted lipid panel for $15 (regularly $24) with results back within a week. Free blood pressure screenings are also available. • Camp Creek moves Sunday services

Camp Creek Baptist Church will move its Sunday service to the Rosewood Center in Liberty for the next few weeks. The move is temporary due to the remodeling of the church’s sanctuary. AWANA clubs will still be held at the church in Central as usual, in the fellowship hall on Wednesday nights.

• Pickens Lions plan meetings each month

The Pickens Lions Club is in need of new members. The club meets the first and third Thursday of every month at Pizza Inn in Pickens. Dinner begins at 6:40 p.m., and the meeting starts at 7 p.m. Meetings are open to anyone interested in joining the club or simply finding out more about the club and how it serves Pickens.

• Classes offered at Hagood Center

New Fiber Room Center activities at the Hagood Center in Pickens have been scheduled for February.

Below is a list of the center’s regular activities:

Monday: 10-11:30 a.m. — cathedral window quilts with Jacquie.

Tuesday: 9 a.m. – 3:30 p.m. — weaving with Pat; 9-11:30 a.m. — doll clothes with Jacquie; 10-11:30 a.m. — yo-yos with Irene and prayer shawls and cancer caps with Sharon (in the library). Wednesday: 9 a.m.-3:30 p.m. — weaving with Pat (in the heritage room); 10-11:30 a.m. — knitting with Tally.

Thursday: 10-11:30 a.m. quilting with Sara; 1:30-3:30 p.m. — rug hooking with Cheryl.

• Concert planned at Lawrence Chapel

A piano concert will be held at Lawrence Chapel UMC on Sunday, Feb. 14. The concert will begin at 10:30 a.m. and feature professional pianists Susan Buckley Cumbie and Rich Blough.

• PHS class of 1956 set to hold reunion

The Pickens High School Class of 1956 is planning a reunion for April 9. It will be a dutch lunch at The Gatehouse Restaurant at the corner of Ann and Griffin Streets in Pickens.  It will begin at noon. • East Side Baptist plans fishing clinic

Sweet treats for your Valentine

We associate Valentine’s Day with sweet treats. We also tend to associate chocolate, strawberries, cherries and raspberries with the holiday that celebrates love.

Red Velvet Cake, Queen of Hearts Tart, Dark Chocolate Cake with Raspberry filling and Chocolate Chip Cherry Cookies say Valentine’s Day to the people lucky enough to eat them.

Yes, they are rich and delicious, and they are supposed to be. It’s nice to have something special to make the day something to remember.

 

 

Queen of Hearts Tart

Crust Ingredients:

  • 1 stick butter, melted
  • 1 tsp. sugar
  • 1 c. flour

Filling Ingredients:

  • 4 c. whole strawberries, hulled and sliced in half
  • 1 1/2 c. warm water
  • 1 1/2 c. sugar
  • 4 tbsp. corn starch
  • 1 3-oz. package strawberry gelatin mix (not instant)
  • 2 drops red food coloring
  • Whipped cream

Preheat oven to 400°.

Mix all crust ingredients and pat into a 9-inch pie plate. Prick the bottom with a fork and bake for about 15 minutes, or until lightly browned. Cool.

Arrange strawberries cut side down on top of top crust.

In a saucepan, cook water, sugar, and corn starch until the mixture becomes clear. Add gelatin and stir until dissolved. Add food coloring. Pour over the strawberries that are in the crust. Chill well.

Top with whipped cream before serving.

Dark Chocolate Cake with Raspberry Filling

Batter Ingredients:

Preheat oven to 350°F.Grease two nine-inch cake pans, set side.In a small microwave-safe bowl, melt the chocolate, and the tablespoon of butter in the microwave on medium heat.

In a large mixing bowl, stir together the stick of butter, the sugar, and the vanilla.

Stir in the eggs, one at a time until they are all incorporated. Stir in the chocolate. Stir in the salt and oil. Stir in 1 1/4 cups of the flour then the 1/2 cup of milk. Stir in the last 1 1/4 cup on flour and the baking powder.

Pour the batter evenly between the two cake pans and bake for 20 minutes or until a toothpick comes out clean.

Filling Directions: In a small sauce pan, combined all of the ingredients and bring to a boil over medium-high heat; set aside to cool.

Icing Directions: In a medium bowl, add all of the ingredients and beat with an electric hand mixer until light and fluffy; set aside.

Cake: When the cake is done, remove it from the oven and let sit for five minutes. Loosen the edges with a knife, and turn them out onto a cooling rack(s) to cool completely.

When the cakes are cool, pour the raspberry filling onto one of the cakes and then top with he other cake. Let cake cool for a while, then spread the frosting on the top and sides. To garnish you can place raspberries on the top and around the cake.

Cherry Chocolate Chip Cookies

  • 1 c. dried cherries, chopped
  • 1/3 c. hot water
  • 6 tbsp. shortening
  • 6 tbsp. butter, softened
  • 1-1/2 c. packed brown sugar
  • 1/2 c. sugar
  • 2 eggs
  • 3 tsp. grated orange peel
  • 1 1/2 tsp. vanilla extract
  • 3 c. quick-cooking oats
  • 1 3/4 c. all-purpose flour
  • 3/4 tsp. baking soda
  • 3/4 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 c. (6 oz.) semisweet chocolate chips

 

 

 

In a small bowl, soak cherries in hot water for at least 10 minutes.

Meanwhile, in a large bowl, cream the shortening, butter and sugars until light and fluffy. Beat in the eggs, orange peel and vanilla. Combine the oats, flour, baking soda, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the chocolate chips and cherries with liquid.

Drop by rounded tablespoonfuls two inches apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until edges are lightly browned. Cool for one minute before removing from pans to wire racks.

 

 

Red Velvet Cake

  • 1 stick butter, softened
  • 1 1/2 c. sugar
  • 2 eggs
  • 2 oz. red food coloring
  • 2 tbsp. cocoa (heaping)
  • 1 c. buttermilk
  • 2 1/4 c. cake flour
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda

Icing ingredients:

  • 3 tbsp. flour
  • 1 c. milk
  • 1 c. sugar
  • 1 tsp. vanilla
  • 1 c. butter

In a larger mixer bowl, cream together butter and sugar.

Add eggs one at a time, beating well after each addition.

In another bowl, mix red food coloring and cocoa until cocoa is completely dissolved. Add to the creamed mixture.

Mixing on low speed, add buttermilk and flour alternately, beginning and ending with flour. Mix well but do not over-beat to ensure a light fluffy cake. Add vanilla extract mix well. Blend the baking soda into the batter.

Transfer into two floured and greased nine-inch round cake pans.

Bake in preheated 350 degree F oven for 25-30 minutes. Cool.

Icing Directions:

Blend into a small saucepan the three tablespoons of flour and the cup of milk. Add the milk to the flour slowly, avoiding lumps.

Cook over medium heat, stirring constantly, until mixture resembles glue.

Cool completely.

Cream together sugar, butter, and vanilla until fluffy.

Add to cooked mixture. Beat, high speed, until very fluffy. Frost cooled cake.
