Carrots are not just for rabbits

For the Courier

“Eat your carrots. They’re good for your eyes.” Probably every child in America has been told that countless times.

But not only are carrots good for you, they taste good, too. They add a natural mild sweetness to many dishes, make a satisfying raw snack and can be prepared in a variety of ways.

Always scrape the outer skin off before eating. They do grow in the dirt, and it’s important to make sure they’re clean.

I hope you enjoy some of these recipes.
